
"Cheesy" Noodles

We just couldn’t justify going Vegan without recreating our favorite childhood dish. We were determined to get perfect this one. There have been many recreations of this dish. Lots of testing and trying and finally we found the perfect one.
We started with cashews as a thickener and then had to stop using it due to food allergies. The best version was just plain and simple and the one thing I can make that I know is healthy for the kids and they will gobble down by the bowlful.
"Cheesy" Noodles
A creamy, bowl of noodles and notalgia. Enjoy a bowl for a dinner or a side dish or potluck.

Ingredients
- 1/2 White, Sweet Onion
- 3-4 Garlic Pieces fresh
- 1 tbsp Vegetable Bullion
- 1 cup Almond Milk
- 1 tbsp Oats
- 2-3 tbsp Nutritional Yeast
- 1 Butternut Sqaush medium sized, cut into cubes
Instructions
- Using a vegetable peeler, peel the skin off the squash and cut roughly into 1" cubes and set aside.
- Cut the onion into large chunks and add to a sauce pan with peeled garlic piecessand olive oil. No need to dice up the garlic. Sautée the onion and garlic pieces until slightly carmelized. Let the oil cool and then transfer the garlic and onion to a high speed blender.
- Next add butternut square chunks to a sauce pan (you can use the same pan you used to sauté the onion and garlic and save some dishes). Add the bullion and water to the pan. Fill the pan with water until the squash is barely covered. Let the squash boil until tender and then transfer it to your blender, reserving the broth in the pan.
- Add the almond milk, oats, salt, nutritional yeast and 1/2 cup of the broth to the blender and blend on high speed until creamy and smooth. If the sauce is too thick and you need to thin it, slowly add remaining broth from the sauce pan just until the mixture begins to turn smoothly. Make sure to taste the mixture before you remove it from the blender.
Notes
Nutritional yeast is a powdered yeast. It is a wonderful source of B vitamins, especially B12 an essential vitamin for those on a Vegan diet. By nature it has a "cheesy" taste to it. It can take some getting used to if you have never tried it before. So I recommend adding 1 tbsp at a time until you reach your desired taste.
